Tamdi Bajje (Red Amaranths Leaves) Sasam

Ingredients:

Red Amaranths leaves -2 cups

Colocasia root (alva mande) -8-10

Coconut -1/2

Green chillies -2 ( blanched )

Red chillies -1-2 (fried with little oil )

salt to taste.

Mustard -1/4 tsp

Curd -1/2 cup

For seasoning :

Oil -2 tsp

Mustard – !/2 tsp

Curry leaves -few

Red chilli -1 (optional )

Method :

  1. Scrape outer skin and cut the colocasia roots into cubes
  2. clean and chop amaranth leaves
  3. Add enough water to colocasia and cook with green chillies ,when green chillies changes its colour take it out and keep aside ,  like this I blanched the chillies.
  4. When the colocasia is cooked add Amaranths leaves ,salt and cook.
  5. Grind coconut with green and red chillies to a fine paste ,add mustard seeds and grind again to just crush the mustard seeds.
  6. Add this ground paste to cooked  amaranths and cook 5-8 minutes and switch off the gas.
  7. Now add curd and mix well.
  8. Heat oil, add seasonings and pour over curry
  9. Serve hot with cooked rice
