This is another version of valval,Cochin side Konkanis prepare it like this.
Ingredients :
- Ash gourd (winter melon ) -250 gms.
- Pumpkin – 250 gms.
- Potato -1
- Colcasia roots (Alva mande ) -5-6.
- Green chillies -5-6
- coconut -1 full
- Salt to taste.
- Coconut oil – 1 tsp.
- Asafoetida powder -1/2 tsp.
Method :
- Grate coconut use only the white portion .
- Add 1 cup of water to coconut and grind in mixie.
- Strain and squeeze to get first coconut extract.
- Do it twice more get second and third extract.
- Boil vegetable in third extract till it is cooked well.
- Add green chillies,second extract,salt and cook again for few minutes.
- Add first thick extract,allow it to boil and remove from fire immediately.
- Add coconut oil and hing (asafoetida) to the gravy
