Pineapple Sheera

Very tasty and simple sweet dish.

Ingredients:

  • Sooji Rawa -1 cup.
  • Pineapple pieces -1/2 cup (chopped into fine pieces ).
  • Sugar -3/4 cup + 1 tbsp.
  • Milk -1 cup.
  • Water – 1 cup.
  • Ghee –  1/4 cup.
  • Cashew nuts – 1 tbsp (finely chopped ).
  • Raisins – 1 tbsp.
  • Saffron – a pinch ( soaked in little warm milk ).
  • Pineapple essence -1/2 tsp.
  • Lemon yellow colour – a pinch.

Method :

  1.  Cook pineapple pieces with 1 tbsp of sugar in a pan till it become sticky syrup consistency. Add pineapple essence and keep it aside.
  2. Heat 1/2 of the ghee in kadai .Fry cashew, raisins and remove from ghee. keep aside.
  3. Fry rawa in that ghee in slow flame for 2-3 minutes. Remove from the kadai and keep separately.
  4. Heat milk and water together in that kadai. Add colour.
  5. When milk + water starts boiling add fried rawa slowly. Cook it in slow flame keep stirring constantly till it cook and form thick mass.
  6. Now add sugar and remaining ghee keep stirring constantly till it forms thick mass again.
  7. When it doesn’t stick to wet hand and get a shine,add pineapple , 1/2 of the nuts , raisins and saffron, mix well and fry few more minutes and remove from fire.
  8. Grease a burfi tray with melted ghee and pour sheera in that.
  9. Pat well on top, decorate with fried nuts and raisins Allow it to cool.Cut into pieces and serve.
