Southekai (Madras Cucumber )Huli

Ingredients:

  • Cucumber -1/2 kg.
  • Chowli (lobia ) -1 tbsp.( heaped ).
  • Grated coconut -2 tbsp.
  • Coriander seeds -3 tsp ( heaped ).
  • cumin seeds – 1 tsp.
  • Fenugreek seeds -1/2 tsp.
  • Red chillies -8.
  • Turmeric powder -1/2 tsp.
  • Cinnamon – 1/4″ piece.
  • Asafoetida – 1/2 tsp.
  • Tamarind -small marble size.
  • curry leaves – few.
  • Jaggery -a little.
  • Salt to taste.
  • Oil, Mustard,Curry leaves for seasoning.

Method :

  • Heat kadai add little oil fry Coriander, cumin , fenugreek seeds, cinnamon,red chillies one by one.fry coconut separately till golden brown colour add turmeric powder, hing and curry leaves .
  • Grind this with little water to fine paste.
  • Soak tamarind in little water and extract its juice.
  • Cut cucumber into cubes (with skin ).
  • Cook chowli in cooker up to one whistle switch of the gas and add cucumber pieces in same cooker and cook up to two more whistle .
  • When cooked add tamarind extract, salt, jaggery and ground paste ,boil few more minutes.
  • Heat oil,fry the seasoning and pour over curry.
  • Serve with rice.
