Traditional “Onam Sadya” Curry of Kerala.
Ingredients :
- Cucumber -2 cups (cubed ).
- Shallots -2 ( peeled and crushed ).
- Green chillies -2 (cut into round pieces ).
- Ginger – !/2 inches piece ( chopped ).
- Grated Coconut -2 tbsp.
- Garlic flake -1.
- Cumin seeds -a pinch.
- Mustard seeds -1/2 tsp ( crushed ).
- Curd – 1/2 cup.
- Salt to taste.
- Coconut oil -2 tsp.
- Curry leaves – few.
Method :
- Peel and cut cucumber into small pieces.
- Grind coconut with little water in to smooth paste just before taken out from mixie add garlic and cumin seeds run mixie for a second .Add crushed mustard for this paste.
- Heat oil add shallots,ginger and green chillies, and fry for 4-5 seconds ,add cucumber with 1 cup of water and cook till soft.
- Now add salt and ground paste and cook few more minutes.
- Take out from heat add curd and mix well.
- Heat little oil fry curry leaves and one red chiili and add to curry.
