Kulitha ( Horse Gram ) Saaru Ani Upakari

Konkanis use Kulithu frequently in cooking. Saarupakari, sannan (idli),Kulitha chutney and Koddel etc,are the preparations.

Sarupakari is very common in our diet, we prepare saarupkari from kali thori,green gram,chowli etc.

Saarupakaris are simple to prepare and healthy too.The saaru is soup like consistency, the water from cooked horse gram.

Ingredients :

  • Horse Gram – 1 cup.

Method :

  • Clean and add about 4 cups of water and cook in pressure cooker.
  • After 2 – 3 whistle low down the flame and cook for 10 – 20 minutes.
  • After cooked well separate water and horse gram and keep aside.

Ingredients for saaru :

  • Cooked Liquor of Horse gram.
  • Cooked horse gram – 1 tbsp.
  • Red chillies – 4-5.
  • Garlic Flakes – 8 – 10. (Crushed with skin )
  • Bimbul (Bilimbi ) – 1. optional
  • Ghee or Coconut oil – 2 tsp.
  • Salt to taste.

Method :

  • Grind cooked horse gram to a paste . Add this paste to cooked liquor of horse gram.
  • Bring to boil add Cut pieces of bimbul and salt.
  • Heat ghee or oil add crushed garlic and fry up to golden brown add pieces of red chilli and pour this seasoning over saaru.
  • Serve hot  with Rice

Kulitha-sarupkari

Ingredients  for Upakari :

  • Cooked Horse gram.
  • Red Chillies – 4 – 5.
  • Grated coconut – 2 tbsp.
  • Garlic Flakes – 8 – 10 ( crushed with skin ).
  • Salt to taste.
  • Oil – 2 tsp.

Method :

  • Heat oil add crushed garlic fry up to golden brown add red chillies .
  • Now add  cooked horse gram and salt stir well in slow flame.
  • Add grated coconut stir it again.
  • Serve hot with Rice.
