Pumpkin-pachadi

Ingredients : 

  • Pumpkin pieces – 2 cups ( cut into small cubes ).
  • Tamarind – One gooseberry size.
  • Jaggery –  2 tbsp.
  • Sambar Powder – 1 tsp.
  • Turmeric powder – 1/4 tsp.
  • Salt to taste.

For seasoning :

  • Green chillies – 1-2.
  • Red chilli – 1 ( Optional ).
  • Oil – 1 tsp.
  • Urad dhal – 1/2 tsp.
  • Mustard seeds – 1/2 tsp.
  • Asafoetida – a pinch.
  • Curry leaves – few .

Method :

  • Add turmeric powder and enough water and cook pumpkin till soft.
  • Now add tamarind juice, jaggery,salt and sambar powder and cook 2 -3 minutes.
  • Fry seasoning in oil and add to the gravy.
  • Serve hot with rice as a side dish.
