This dish is Prepared in temple festival and specially on Margashira Shasti day ,every Konkani household prepare this.
Ingredients:
- Kuvale ( Winter gourd ) – 1/2 kg.
- Grated coconut – 2 cups.
- Red chillies (Roasted ) – 3.
- Tamarind – a pea size.
- Mustard seeds – 1/2 tsp.
- Salt to taste.
- Jaggery – a pea size.
For seasoning :
- Oil – 1 tsp.
- Mustard seeds – 1/2 tsp.
- Curry leaves few
Method :
- Peel,discard the seeds and cut 1 inch pieces of ash gourd
- Grind coconut,red chilli and tamarind into medium fine paste,add mustard seeds and grind for a second.
- Cook ash gourd with enough water.
- Add salt and jaggery boil few more minutes.
- Now add ground masala and cook few more minutes.
- Heat oil in small kadai add mustard seeds when it splutter add curry leaves.
- Pour this seasoning over the curry.
- Serve hot with rice.
