Mango-sheera

Ingredients:

  • Semolina ( Rawa ) – 1 cup.
  • Sugar – 1/2 cup.
  • Hot water – 3 cup.
  • Ghee – 1/4 cup.
  • Mango pulp -1 cup.
  • Sugar  -1/4 cup.
  • Raisins and Cashew nuts – 1  tbsp.
  • Mango essence – 2 drops.

 Method :

  • Mix mango pulp and 1/4 cup of sugar and cook in a heavy kadai-pan stirring constantly till it becomes thick.

Mango-puree

  • Heat 2 tbsp ghee in a deep frying pan.Fry cashew,raisins and remove from ghee.Keep it aside.
  • Fry Semolina ( Rawa ) in the same ghee for 1 to 2 minutes.
  • Add hot water and keep stirring constantly till all water dries up .
  • Now add rest of the ghee and 1/2 cup sugar and keep stirring constantly untill it forms a thick mass.
  • At this stage add mango puree and continue stirring .
  • When it doesn’t stick to wet hand gets a shine,remove from fire.
  • Grease a burfi  tray with melted ghee and pour sheera in that.
  • Pat well on top to remove air pockets,decorate with fried nuts and raisins.Allow it to cool,Cut into piece and serve.
