Magge ( Madras cucumber ) Ambat

Ingredients :

  • Magge ( Madras Cucumber ) – 250 gms.
  • Tender cashew nuts -10 -15.
  • Tendle (gherkins)  – 10 -12.
  • Drum stick -1.
  • Tuvar dal – 1/4 cup.
  •  Grated coconut – 2 cups.
  • Red Chillies – 4-5 (fried in little oil ).
  • Tamarind – one chana size.
  • Salt to taste.

For Seasoning :

  • Oil – 2 tsp.
  • Mustard seeds – 1/2 tsp.
  • Curry leaves – a few.

 Method :

  • Grind coconut, red chillies and tamarind with enough water to a smooth paste.
  • Pressure cook dal.
  • Peel and cut cucumber, cut tendle and drumstick.
  • Cook all other vegetables and cashew nuts in another vessel, except the drum stick.
  • When other vegetables are almost cooked add drum stick,if you add drum stick with other vegetables it will over cook.
  • Now add salt and ground paste, boil for a few more minutes and switch of the heat
  • Season it with mustard and curry leaves splattered in oil.
  • Serve hot with  rice as side dish.
