Mango Rasayana

Mango-Rasayana Ingredients :

  • Mangoes – 2.
  • Grated coconut – 2 cups.
  • Jaggary  grated – 1 cup.
  • Cashew nuts – 10 -12.
  • Sugar – 1 tbsp.
  • Cardamom -1/2 tsp.
  • Saffron – few.
  • Salt – a pinch.

Method :

  • Soak cashew nuts in water for 1/2 an hour.
  • Peel one Mango and chop into small pieces.
  • Add sugar and salt to this pieces.
  • Peel another Mango and squeeze up the pulp from the pith part that is the core and keep aside.
  • Grind coconut with soaked cashew nut into smooth paste extract first and second milk from this.
  • Add grated jaggary to the milk mix properly,adjust sweetness to your taste.
  • Add mango pieces , puree, cardamom powder and saffron mix well.
  • Refrigerate and serve chilled.
