Karathe ( Bitter Gourd ) Pathrodo

This is the Kokani version of stuffed bitter gourd.

Ingredients :

  • Bitter Gourd – 2.
  • Kashmiri Red chillies – 25.
  • Coriander seeds – 3 tbsp.
  • Tamarind – Big lemon size.
  • Asafoetida – slightly bigger than a chick pea.
  • Coconut oil – 3 tbsp.
  • Salt to taste

Method :

  • Slice the bitter gourd into one inch round pieces.
  • Discard the seeds , if you dont like them (optional) .
  • Fry red chillies in little oil.
  • Grind all the other ingredients (except oil) coarsely.
  • Smear and stuff inside the bitter gourd pieces.

  • Heat oil in a non stick cooking pan and arrange the stuffed pieces.

  • Reduce the flame and fry .
  • Turn the bitter gourd pieces gently and fry till it becomes almost black in colour on all the sides evenly.
  • Serve with rice.
