This is the Kokani version of stuffed bitter gourd.
Ingredients :
- Bitter Gourd – 2.
- Kashmiri Red chillies – 25.
- Coriander seeds – 3 tbsp.
- Tamarind – Big lemon size.
- Asafoetida – slightly bigger than a chick pea.
- Coconut oil – 3 tbsp.
- Salt to taste
Method :
- Slice the bitter gourd into one inch round pieces.
- Discard the seeds , if you dont like them (optional) .
- Fry red chillies in little oil.
- Grind all the other ingredients (except oil) coarsely.
- Smear and stuff inside the bitter gourd pieces.
- Heat oil in a non stick cooking pan and arrange the stuffed pieces.
- Reduce the flame and fry .
- Turn the bitter gourd pieces gently and fry till it becomes almost black in colour on all the sides evenly.
- Serve with rice.
