Banana (Plantain )Chips

 

Plantain nendra pazham

Ingredients :

  • Nendrakaya /Raw banana /Plantain – 1 kg.
  • Coconut oil for deep frying –  1/2 liter.
  • Salt – 2 – 3 tsp.
  • Turmeric powder – 1 tsp.

Method :

  • Dissolve salt in 1/2 cup of water.
  • Slit the plantain skin and peel it off.

  • Take a big bowl and put the peeled plantains, add turmeric powder. Now add water until all plantains are submerged.

  • Take the plantain out of the water and pat dry.
  • Heat oil in a big kadai.
  • Take a vegetable slicer and start slicing the plantain directly in hot oil.
  • Finish one plantain at a time into hot oil.

  • Stir well, after a few minutes you should hear the nice crackling sound, that is when they are done.
  • Now sprinkle dissolved salt water ( 1 – 2 tsp at beginning you must reduce the quantity later. ).
  • Be careful as this step splatters out a lot of hot oil and water mixture.
  • When the crackling sound stops take the fried chips out of the oil , stain out excess oil and rest them on an oil absorbent paper.

  • Store in an air tight container.

Note :

  • It would be good if you apply some oil on your hand, plantains discharge a gluey serum that is both hard  to get off the skin and also gets between your nails.
  • Don’t discard skin of the plantain you can prepare tasty dish (stir fry, Upkari) from this .
