Pansa Muliku ( Jackfruit Dumpling )

Ingredients :

  • Raw Rice – 1 1/2 cup.
  • jackfruit chopped – 4 cups .
  • Jaggery powder – 2 cups.
  • Cashewnuts  chopped – 2 tbsp.
  • Cardamom powder – 1 tsp (optional ).
  • Salt – 1 tsp.
  • Oil for deep frying.

Method :

  • Soak the rice for 2 hours.
  • Grind rice and jackfruit without adding water to a coarse paste.
  • Add jaggery and salt and grind for a minute.
  • If the batter is watery add 1 tbsp rice flour and make the batter in to dropping consistency.
  • Heat oil and drop a spoon full of batter into hot oil.
  • Deep fry to a golden brown on a slow flame.
