Brined Bamboo shoot fry

This is a Konkani delicacy, prepared from bamboo dipped in brine solution (i.e salt solution).

Ingredients:

– 2 pieces of Bamboo shoot.

– Chilli powder as required.

– 1 tablespoon of Rice rava.

– 1 tablespoon rice powder.

– Oil for shallow fry.

Method:

– Soak the bamboo in water for 2 hours to neutralize the excess salt.

– Drain and crush the bamboo.

– Mix the chilli powder into the latter.

– Mix rice rava and rice powder.

– Dip the crushed shoot into the rava mixture and shallow fry it.

Serve it with rice.
