This is an Maharashtrian dish consumed during fasting.
Ingredients:
Sabudana – 1 cup
Boiled Potato – 1small (small cubed ).
Roasted Peanuts – 1 tbsp
Roasted Peanuts ( coarsely powdered ) – 2 tbsps
Green chillies – 2-3
Cumin seeds – 1 tsp
Curry leaves – few
Turmeric powder – 1/2 tsp
Salt to taste
To garnish;
Coconut scraping – 1 tbsp
Coriander leaves – 1tbsp
Lime juice – 1/2 tbsp
Method :
1. Rinse the sabudana using a strainer until the water runs clear. This is an important step that helps get rid of the starch which is what makes sabudana clumps.
2. Soak the sabudana for atleast 6 hours or overnight. You need just enough water to submerge sabudana. Use about 3/4 cup water for every one cup.
3. The soaked sabudana should be soft and crumbly when you press it. Also all the water should have been absorbed. If it is not enough sprinkle some water and leave it for few more time.
4. Heat a wok or kadhai,add oil. When the oil heats up add cumin seeds.
5. Once cumin seeds starts crackle add curry leaves, chopped green chillies and turmeric powder,let them fry for few seconds.
6. Add peanuts, potatoes,fry few more seconds.
7. Now add sabudana , peanut powder and salt. Stir it well and lower the heat in to medium low. Stir once during the cooking process.
8. Once most of the sabudana pearls turn translucent add coconut, coriander leaves and sprinkle lime juice mix it well and switch off the heat.
9. Serve hot.
