
Ingredients :
- Bitter Gourd – 2
- Green Chillies – 6 -8 ( slit)
- Red Chillies – 4 – 5 ( broken)
- Garlic – 10 – 12 pods
- Hog plums – 4 ( If you use Bilimbis 7 – 8 or Tamarind Pulp – 2 Tbsps )
- Powdered Jaggery – 2 Tbsps
- Oil – 2 Tbsps
- Salt to taste
Method :
- Chop bitter gourd , sprinkle some salt and keep aside for 10-15 minutes. This is to take out the some of the bitterness. Skip this step if you like the bitter taste.
- Squeeze out the water and set aside.
- Crush the garlic pods and the hog plums.
- In a kadai heat the oil. Add the crushed garlic and sauté till it turns brown.
- Add the broken red chillies and slit green chillies . Sauté for 2-3 minutes.
- Add the bitter gourd and hog plums. Sauté for 2-3 minutes.
- Add salt , jaggery and a little water. Cover and cook for 5 minutes or until it is done.
- Serve Hot.
