Karathe Thalasan

Ingredients :

  • Bitter Gourd – 2
  • Green Chillies – 6 -8 ( slit)
  • Red Chillies – 4 – 5 ( broken)
  • Garlic – 10 – 12 pods
  • Hog plums – 4 ( If you use Bilimbis 7 – 8 or Tamarind Pulp – 2 Tbsps )
  • Powdered Jaggery – 2 Tbsps
  • Oil – 2 Tbsps
  • Salt to taste

Method :

  1. Chop bitter gourd , sprinkle some salt and keep aside for 10-15 minutes. This is to take out the some of the bitterness. Skip this step if you like the bitter taste.
  2. Squeeze out the water and set aside.
  3. Crush the garlic pods and the hog plums.
  4. In a kadai heat the oil. Add the crushed garlic and sauté till it turns brown.
  5. Add the broken red chillies and slit green chillies . Sauté for 2-3 minutes.
  6. Add the bitter gourd and hog plums. Sauté for 2-3 minutes.
  7. Add salt , jaggery and a little water. Cover and cook for 5 minutes or until it is done.
  8. Serve Hot.
