
Biscuit rotti is a crisp puri filled with a spicy and delicious stuffing. This Mangalorean style Kachori is a popular snack item around Mangalore and Udupi. The method is same but the stuffing is different . My mother used to prepare this as an evening snack as it goes well with hot coffee or tea . They can be made and stored for at least a day or two and travels well. It might become a little soft as time goes by, but will still taste amazing.
Ingredients :
For the outer dough –
- Maida – 2 & 1/2 cup heaped .
- Oil – 1 ladle full .
- Baking soda – a pinch .
- Salt to taste .
For stuffing–
- Grated coconut – 2 cups .
- Semolina ( rawa ) – 3 Tbsp .
- Urad dal – 3 Tbsp.
- Besan(Chickpea flour) – 1 Tbsp.
- Jaggery powder – 1 Tbsp.
- Green chillies – 4 finely chopped.
- Chilli powder – 2 tsp.
- Coriander powder – 1 tsp.
- Turmeric powder – 1/2 tsp.
- Asafoetida (Hing) powder – 1 tsp.
- Mustard seeds – 1 tsp.
- Curry leaves – few.
- Oil – 2 Tbsp.
Oil for deep frying .
Method :
- Dry roast semolina (rawa)
- Dry roast urad dal till light pink and powder it coarsely .
- In a mixing bowl add the maida flour, salt and baking soda. Mix it well .
- Heat one ladle full of oil and pour it over maida and mix it well . Now add little by little water and make a firm dough . The reason for adding hot oil to the dough is to make the biscuit rotti crispier. Cover this dough and keep aside for 1/2 an hour .
- Now for the filling, in a pan heat oil and add the mustard seeds. When it starts to splutter add chopped green chillies and curry leaves. Fry for a few seconds, add besan and roast for a few seconds. Now add chilli powder, turmeric powder, coriander powder, asafoetida powder, salt and jaggery powder. Mix it well then add the grated coconut, fried urad powder and fried rawa. Switch off the flame, mix very well and keep aside to cool. The stuffing is ready .
- Knead the dough well and make equal lemon size balls.
- Take one ball flatten it by hand or roll it without dusting .
- Take a table spoon of the fillings and make small ball of that and place it at the center of the rolled out dough, bring the sides of the dough to the center and seal it completely .
- Dust with a little flour and roll the biscuit rotti to a 2 inch diameter. Repeat the same process for the rest of the dough .
- Heat enough oil in a kadai and keep it on a medium heat . Make sure it doesn’t heat up too much . Fry biscuit rottis two or three at a time, according to your kadai size. Fry on a medium heat till it is golden brown on either side .
- Drain on a kitchen napkin and serve with hot tea or coffee .
