
This soup is a light meal on its own or would make a meal with garlic bread or a crisp salad. It’s loaded with fresh broccoli, carrots and cheese.
Ingredients :
1. Broccoli – 2 large ( with stalks ) .
2 . Carrots – 2 large ( grated ) .
3 . Water – 5 cups .
For white sauce :
1 . Maida ( All purpose flour ) – 3 tsps .
2 . Milk – 1 cup .
3 . Butter – 1 tbsp .
4 . Cheese – 100 gms ( grated ) .
Pepper and salt as per taste .
Method :
1 . Cut broccoli in to small florets , I have used the tender stalks of the broccoli, cut in to small pieces .
2 . Grate the carrots .
3 . Cook the broccoli and carrots with 5 cups of water in a cooker for 5 whistles and put it off . Once pressure release, open and mash then with masher .
4 . In a pan melt the butter slightly and add maida and roast on a slow flame for 2-3 minutes . Now add milk and stir until mix well . Then add grated cheese stir continuously till it becomes fluffy . Season with salt and pepper . Remove from fire .
5 . Add the white sauce to the cooked broccoli broth . Bring it to a boil . Check the seasonings and add accordingly .
6 . Serve it along with garlic bread .
