Ladi Pav is a home made bun . Which is very famous in Mumbai as a street food . The pav is best had with spicy bhaji or vegetable curry , you can serve it as a sandwich lined with chutney and packed with Potato Vadas or as Dabeli . This recipe makes – 16 Pavs .
Ingredients :
1. Warm Milk – 1 1/2 cups .
2 . Instant dry yeast – 1 1/2 tsp .
3 . Sugar – 2 tsp .
4 . Maida ( all purpose flour ) – 3 cups .
5 . Salt – 1 tsp .
6 . Butter ( room temperature ) – 4 tbsps .
Milk for brushing .

Method :
1 . In a deep bowl combine warm milk , sugar and instant dry yeast mix well and keep aside for 10 minutes to rise .
2 . In a big bowl combine the maida with salt and mix well .
3 . Now add the yeast mixture and mix well .4 . Transfer this sticky mixture on the kitchen slab and kneed well. 5 . Add the butter little by little and kneed by stretching the dough and folding it back till it is smooth and elastic . kneed at least for 8 – 10 minutes.
6 . The dough should look smooth like in the image . 7 . Transfer the dough in a greased bowl . Cover it with damp cloth and keep aside for one hour or till it doubles in warm place .8 . The dough has risen and double in size .9 . Deflate the dough by bouncing it , which should leave a depression in the dough without bouncing back to its original shape . This means the dough has perfectly risen .10 . Transfer this dough to a kitchen slab and kneed again for five minutes by stretching and folding method till it becomes smooth .11 . Now devide the dough in to 16 equal portions. 12 . Roll each portion of the dough in to smooth round . 13 . Place them on greased baking tray at regular intervals .
14 . Cover it again with damp cloth and keep aside for at least 30 minutes .
14 . They will double in size as shown in picture . 15 . Brush the pav with milk .
16 . Bake it in pre heated oven at 180 degree centigrade for 30 minutes .
17 . Take it from oven , brush the pav with butter and cover it with damp cloth .
18 . Once cooled loosen the edge with help of knife .
