
Ganti buthi is another delicacy of Colocasia leaves ( Tera pan in Konkani ) prepared mostly in monsoon.
Ingredients:
- Terapan ( Colocasia leaves ) – 30 – 40 .
- Hog plums – 4.
- Bamboo shoots pieces – 5 -6
- Garlic pods (crushed ) – 8 – 10.
- Grated coconut – 1 1/2 cups.
- Fried Red chillies – 8+4 ( Normal + Bedgi ).
- Coriander seeds – 1 tsp.
- Coconut oil – 2 tsp .
- Salt to taste.
Method :Make the knots or ganti with the leaves in the following way .





1 . Here I used brined Bamboo shoots so to take excess of salt dip in water for 4 – 5 hours and use.
2 . Wash and crush hog plums.
3 . Cook ganti ( Colocasia leaves knots ) , bamboo shoots and hog plums with 1/2 cup of water in pressure cooker for 2 whistles.
4 . Grind grated coconut , red chillies and coriander seeds in to smooth paste .
5 . Add this paste to cooked Colocasia with crushed garlic and boil for 5 – 10 minutes .
6 . Now taste salt since we have used bamboo shoots in brine so we always check salt and add adjust according to our taste.
7 .Add coconut oil and switch off the flame.
8 .Serve hot with rice.
