Unna kaya

Unnakaya is delicious sweet and traditional North Kerala dish prepared during Ramzan days . This dish is prepared by  filling smashed banana stuffed with sweet coconut filling . Unnakaya is a good snack item  which can fill the snack box and can be served as an evening snack .

Ingredients :

  • Plantains – 2 ( medium ripe ) .
  • Grated coconut  – 1/2 cup heaped .
  • Grated jaggery – less than 1/2 cup .
  • Cashew nuts – 1 tbsp  pieces .
  • Raisin – 1 tbsp .
  • Ghee – 1 tsp .
  • Cardamom powder – 1/2 tsp .
  • Oil for deep frying .

Method :

  1. Steam cook banana . I used microwave to cook . In microwaveable steamer I steam cooked for 5 minutes .
  2. Remove the outer skin and  cut into halves . Discard the inner black seeds . Mash well without lumps . keep aside .
  3. Heat ghee in a pan fry cashew nuts and raisin and keep aside .
  4. In a same pan add grated coconut and jaggery and cook till all the water in coconut evaporates and become a lump . Add fried nuts , raisin and cardamom  mix well and allow to cool .
  5. Divide the banana mix in to  evenly size balls
  1. Take one ball in your hands and flatten it by pressing using the other hand to form a circle shape .
  1. Place 1 tbsp of coconut filling in the centre .
  1. Seal it properly by bringing in all the sides .
  1. Shape into cylindrical rolls .
  2. Heat oil in kadai , deep fry till golden brown in colour.

From this recipe I  yield 6 Unnakaya .
