
Unnakaya is delicious sweet and traditional North Kerala dish prepared during Ramzan days . This dish is prepared by filling smashed banana stuffed with sweet coconut filling . Unnakaya is a good snack item which can fill the snack box and can be served as an evening snack .
Ingredients :

- Plantains – 2 ( medium ripe ) .
- Grated coconut – 1/2 cup heaped .
- Grated jaggery – less than 1/2 cup .
- Cashew nuts – 1 tbsp pieces .
- Raisin – 1 tbsp .
- Ghee – 1 tsp .
- Cardamom powder – 1/2 tsp .
- Oil for deep frying .
Method :
- Steam cook banana . I used microwave to cook . In microwaveable steamer I steam cooked for 5 minutes .
- Remove the outer skin and cut into halves . Discard the inner black seeds . Mash well without lumps . keep aside .
- Heat ghee in a pan fry cashew nuts and raisin and keep aside .
- In a same pan add grated coconut and jaggery and cook till all the water in coconut evaporates and become a lump . Add fried nuts , raisin and cardamom mix well and allow to cool .
- Divide the banana mix in to evenly size balls

- Take one ball in your hands and flatten it by pressing using the other hand to form a circle shape .

- Place 1 tbsp of coconut filling in the centre .

- Seal it properly by bringing in all the sides .

- Shape into cylindrical rolls .
- Heat oil in kadai , deep fry till golden brown in colour.
From this recipe I yield 6 Unnakaya .
