Moist Coffee Cake Eggless .

This is an absolutely delicious soft , moist cake , easy to make and goes well with a lovely cup of coffee too . To make it juicy and soft , here , I have used coffee flavored syrup . It tastes best when you cool it in fridge . I am sure , once you’ve tried this recipe , you will make it time and time again .

Ingredients :

1 . Instant Coffee Powder – 2 tbsps .

2 . Sugar – 1/2 cup .

3 . Milk – 2 tbsps .

4 . Oil – 1/4 cup .

5 . Vanilla essence – 1 / 2 tsp .

6 . Maida ( All purpose flour ) – 1 cup .

7 . Baking powder – 3/4 tsp .

8 . Baking soda – 1/4 tsp .

9 . Salt – 1/4 tsp .

10 . Milk – 1/2 cup .

For coffee syrup :

1 . Instant coffee powder – 1 tsp .

2 . Sugar – 2 tsp .

3 . Water – 1 1/2 tbsps .

Method :

1 . Sieve together maida , baking powder , baking soda and salt , keep aside .

2 . Grease and line the butter paper to the cake tin and keep aside .

3 . In a big mixing bowl , blend together coffee powder , sugar and milk to smooth and creamy texture .

4 . Now add oil and vanilla essence and blend again to mix well .

5 . Preheat the oven at 180 degree centigrade for 10 minutes .

6 . Now add maida mixture to the coffee mixture little by little with milk using cut and fold method .

7 . In between add the milk little by little until the dough is combined well . Do not over mix .

8 . Transfer the cake dough to the greased tin .

9 . Tap the tin twice to level up the dough and remove any air bubbles if present .

10 . Bake in preheated oven at 180 degree centigrade for 30 – 35 minutes .

11 . After 30 – 35 minutes insert tooth pick to check if the cake is done . If the tooth pick comes out clean it is done else you can bake further for 2 – 3 minutes .

12 . Cool and unmould the cake from tin . Prick at several places with tooth pick so that it soaks the syrup well .

Coffee Syrup :

13 . In a small saucepan , add coffee powder , sugar and water. Bring it to boil for 1- 2 minutes keep stirring well until the sugar dissolves . Remove from flame when it boils .

14 . Pour this syrup over the cake so that it soaks it well and becomes soft and moisty .

15 . Cool the cake in the refrigerator for 2 – 3 hours . This makes the cake easier to slice and tasty too .
