Thiksani Umman ( Spicy Mixed Vegetables ) .

Thiksani Umman is one of the side dish of the Kochi G S B community . The recipe is very simple and easy to prepare . This tasty lip smacking dish is goes well with Rice , Dosa , Idly , Ramdanu and also with Upma . The vegetable used in this recipe are Potato , Alvamande ( Taro ) , Yard Beans , Bitter Gourd , Raw Mango pieces or brined mango pieces , If mango pieces are not available use Star fruit ( karmbal ) or Bimbili or Hog plums .

Ingredients :

1 . Potatoes – 2 medium size .

2 . Alvamande ( Taro ) – 8 – 10 .

3 . Yard Beans ( Alsando ) – 8 – 10 .

4 . Bitter Gourd – 1 small .

5 . Hog plums – 3 – 4 .

6 . Chilli powder – 2 tsp .

7. Asafoetida powder – 1 tsp .

Salt to taste .

For seasonings :

Oil – 1 tsp .

Mustard seeds – 1 tsp .

Curry leaves – 1 sprig .

Method :

1 . Wash peel and chop the potatoes in to thick slices .

2 . Peel the outer skin . Wash and slice taro also .

3 . Wash and cut the yard beans into 1 inch pieces .

4 . Wash and cut bitter gourd into thick slices .

5 . Crush the hog plums in mortar pestle .

6 . Cook all this vegetables in pressure cooker with enough water . Take two whistles and switch off the flame .

7 . When pressure releases open the lid of the cooker , add more water if needed and boil the vegetables .

8 . Add salt mix well and cook in lower flame .

9 . In a small bowl take chilli powder add little water and mix well .

10 . Add this to the boiled vegetables with asafoetida powder and cook few more minutes .

11 . Heat oil in a small pan . Add mustard seeds when it starts to splutter add cury leaves and switch off the flame .

12 . Add this seasoning to the vegetables .

13 . Serve hot with Rice . Dosa or Idly .
