Karathe Ambade Sukke ( Bitter Gourd and Hog Plums in sweet and sour curry )

Ingredients :

1 . Bitter Gourds – 2 big .

2 . Hog plums – 8 – 9 .

3 . Grated coconut – 2 cups .

4 . Red chillies – 10 – 12 .

5 . Urad dal – 2 tbsps .

6 . Jaggery powder – 1/2 cup .

7 . oil – 1 tsp .

Salt to taste .

For seasonings :

Oil – 2 tsp .

Mustard seeds – 1 tsp .

Curry leaves – 1 sprig .

Method :

1. Wash , deseed and slice bitter gourd .

2 . Wash and crush the hog plums in a mortar pestle .

To prepare Sukke masala :

3 . In a small sauce pan heat 1 tsp oil roast the urad dal till it turns golden brown , remove it from the pan keep aside . In the same pan roast red chillies . Let cool along with urad dal .

4 . Grind together grated coconut , red chillies and urad dal in to coarse paste with little water .

5 . Heat oil in a big pan add mustard seeds , when it starts splutter add cury leaves .

6 . Add bitter gourd , hog plums with jaggery and salt .

7 . Cover the pan with lid and cook 5 – 10 minutes .

8 . Open the lid add ground masala , mix well and cook 8 -10 minutes stir in between .

9 . Serve hot with rice .
