
At home we mostly prepare our Konkani G S B cuisine on a regular basis . But once in a while I prepare North Indian or Indo – Chinese cuisine . My kids love the tandoori naan at restaurants . So I tried Nisha Madhulika ‘s video online . Normally if we order in Naan from restaurants , it turns rubbery once it becomes cold . But these naans stay soft even after a long time .
Ingredients :
1. Maida ( All purpose flour ) – 3 cups .
2 . Refined oil – 3 tbsp + 2 tbsps .
3 . Baking soda – 3 / 4 tsp .
4 . Sugar – 1 1 / 2 tsp .
5 . Salt – 3 / 4 tsp .
6 . Curd – 1 / 2 cup .
7 . Warm water – 1 / 2 cup .
For topping :
Garlic finely chopped – 2 tbsps .
Coriander leaves finely chopped – 2 tbsps .
Kalonji seeds – 1 tbsp ( optional ) .
For brushing :
Butter – 2 – 3 tbsp .
Method :
1 . In a large mixing bowl , add maida , baking soda , salt , sugar , oil and curd , mix it well .
2 . Add warm water little at once and knead the dough adding more warm water as needed .
3 . At this stage add one table spoon oil and knead the dough very well until soft and pliable . It must be soft and not sticky .
4 . Add 1 tbsp of oil to the dough . Cover and keep aside to rest for 2 hours .
5 . After 2 hours divide the dough in to 10 equal parts and make round balls tucking the edges inside . Cover the balls with wet cloth .
6 . Mean while chop , garlic and coriander leaves . Melt butter and set aside .
7 . Now flour the rolling area a very lightly . Place a dough ball and flatten it .
8 . Roll or stretch the dough to a ovel or a elongated shape . Sprinkle the toppings and then lightly roll it again .
9 . Heat a Iron tawa or griddle .
10 . Take the naan and brush water to the back of the naan . This makes the naan stick to the tawa , when the tawa turned over the fire .
11 . Carefully place the water brushed side of the naan on the hot tawa .
12 . Soon you will see bubbles on the naan , Immediately turn the tawa on direct gas flame .

13 . Cook on the other side as well until completely cooked and slightly charred .
14 . Take out the naan from tawa and brush melted butter on top of the naan .
15 . Prepare all other naans similarly .
16 . Serve hot with any curry .

Note :
Prepare naan slightly thicker than Chapathi , do not make them too thick .
