
Doodh Pak is a traditional dessert without this dessert no festival or feast is incomplete . This dessert is prepared with Gandakasala rice , this rice is very scented , high nutritional value , fine taste and cooking properties . This variety of rice is traditionally used in special occasions like wedding feast .
Ingredients :
Milk – 2 litres .
Gandakasala Rice – 250 gms .
Sugar – 250 gms .
Water – 500 ml .
Cashew nuts – 2 tbsps .
Raisins – 2 tbsps .
Almonds – 2 tbsps .
Ghee – 1 tbsp .
Cardamom powder – 1 tsp .
Saffron – few strands .
Method :
1. Boil milk in heavy bottom vessel and keep aside .
2. Heat 2 glass water in pressure cooker .
3. Wash and drain the rice add this with 1 glass of hot milk in pressure cooker .
4. Take 2 – 3 whistles and simmer the cooker to 20 minutes then switch off the flame . When pressure come down open the lid of the pressure cooker and add remaining milk and mix it well .
5. Cook the rice in milk in very low flame stir in between. Cook on slow flame approximately 10 – 15 minutes , while stirring and scraping the sides of the pan occasionally .
6. Combine the saffron and 1 tbsp of warm milk in a small bowl and keep aside .
7. Heat ghee in small pan and fry cashew nuts , almonds and raisins in very slow flame and keep aside .
8. Add sugar to the rice , mix well and cook on a slow flame for 5 – 6 minutes or till the sugar dissolves completely while stirring continuously . When milk start to boil again switch off the flame .
9. Add saffron milk , cardamom powder and fried nuts and raisins .
Serve hot or chilled .
