Rice Muruku Or Chakuli

Muruku is a deep fried snack made with rice flour and dal flour . There are so many varieties of Muruku , the one I am sharing here is rice flour with urad dal muruku . I shared two other varieties in my previous blogs , one is fried dal and idly rice muruku , another one is maida muruku . This one is very different with aroma of roasted urad dal and are crunchy as well light in texture .

Ingredients :

1 . Whole urad – 1 cup level .

2 . Fine Rice flour – 2 cups heaped .

3 . Grated coconut – 1 cup .

4 . Butter – 2 tbsps ( room temperature ) .

5 . Sesame seeds – 1 tbsp .

6 . Cumin seeds – 1 tbsp .

Salt to taste .

Oil for deep frying .

Method :

1 . In a kadai dry roast urad dal on a medium flame . Keep stirring and roast evenly . When they turn lightly golden , off the . Do not over roast , keep aside to cool .

2 . When cool add to blender and powder to a fine flour . If the flour is coarse , then seive it .

3 . In same blender add grated coconut with 1/2 cup of water and extract first thick milk . Take second milk and keep aside .

4 . In a mixing bowl add rice flour , urad flour , sesame seeds , cumin seeds and salt , mix it well . Add 2 tbsps of butter and mix every thing well .

5 . Pour thick coconut milk little by little and kneed the flour to make smooth no sticky dough . If thick coconut milk is not enough add thin milk .

6 . If the dough is sticky and soggy it will absorb lot of oil while frying . If very dry then muruku will break while making them .

7 . Make dough 4 – 5 equal parts and cover it with damp cloth .

8 . Take one part of dough , just wet your palms with water and knead the dough to soft and pliable .

9 . Grease the mould , fit the star muruku plate , stuff the dough inside keep it ready .

10 . Heat oil in heavy bottom kadai .

11 . Slowly begin to press the mould to release the dough and make a spiral on moist cloth or butter paper , prepare enough murukus .

12 . Put on the flame to medium high . Make sure the oil is hot enough . To check if the oil is hot , drop a tiny piece of dough in to oil , it floats if the oil is ready .

13 . Gently drop the muruku in hot oil . 5 – 6 at time . Fry on medium flame and keep stirring for even frying . Fry until golden and crisp on both sides . Bubbles begins to reduce when fried well . If not fried well they will turn chewy after 1 – 2 days , so make sure to fry evenly on medium flame .

14 . Drain the muruku on kitchen tissue .

15 . Prepare all dough same way and make murukus .

16 . Store muruku in air tight container .
