
Osmania biscuits are famous biscuits sold in Irani cafes of Hyderabad . These biscuits got their name after the last ruler of Hyderabad Mir Osman Ali Khan . The perfect balance of sweet and salt makes them stand out and unique . To make an evening perfect all a need is a cup of Irani chai with this biscuits .

Ingredients :
1 . Maida ( all purpose flour ) – 200 gms .
2 . Custard powder – 10 gms .
3 . Milk powder – 10 gms .
4 . Baking powder – 1/4 tsp .
5 . Salt powder – 1/4 tsp .
6 . Cardamom powder – 1/2 tsp .
7 . Butter – 120 gms ( at room temperature ) .
8 . Sugar powder – 80 gms .
9 . Milk – 20 ml .
For milk wash :
Saffron few strands .
Warm milk – 10 ml .

Method :
1. Take some warm milk in a small bowl add some strands of saffron ,mix it well and keep aside .
2. Line the baking tray with parchment paper and set aside .
3 . Sift the maida , salt , baking powder , milk powder and custard powder together in a bowl and keep aside .
4 . In big mixing bowl cream the butter and sugar powder with spatula or whisk up to light and cream .


5 . Add milk and mix well .

6 . Add maida mixture little at a time to the creamed butter and mix well . Add cardamom powder and mix well . Use spatula for this .

7 . Knead them very lightly until well combined .

8 . The dough will be cracky one .

9 . If the dough is sticking to your hands , refrigerate the dough cover it with cling rap for 10 – 20 minutes .
10 . Preheat the oven at 180 degree centigrade for 10 minutes .
11 . Dust the working surface with little flour and roll out the dough into 1/4 inch thick sheet .


12 . Use a cookie cutter cutout the cookies .

13 . Place them on prepared baking tray , keeping enough space in between .

14 . Repeat the process with the remaining dough .
15 . Brush the top of the cookies with saffron mixed milk .

16 . Bake them in preheated oven at 180 degree centigrade for 20 – 25 minutes or until golden brown .
17 . Place them on wire rack and cool them to room temperature .

18 . Store in airtight container .
15 . Serve osmania biscuits with Itani chai or masala tea .
