
Churmundo is a konkani style laddu made out of wheat flour . Which is staple konkani sweet . Though of course like most recipes there are several ways this laddu can be made . Tellechery , kannur side konkanis prepare this laddu by another method , that I will prepare and post shortly . But this particular churmundo recipe I learnt from my mother . Incorporates with wheat flour , rawa and besan , for that perfect melt in mouth delicious goodness . She used Bura sugar for this laddu , here I am using sugar powder instead of Bura sugar .
Ingredients :
1 . Wheat flour – 2 cups ( heaped ) .
2 . Rawa ( semolina ) – 2 tbsp ( heaped ) .
3 . Besan ( chick peas flour ) – 2 tbsp ( heaped ) .
4 . Sugar powder – 1 1/2 cup ( level ) .
5 . Ghee ( clarified butter ) melted – 3/4 cup or 17 tbsp approx .
6 . Cardamom – 2 tsp .

Method :
1 . In a wide pan add wheat flour , rawa and besan . Mix well .


2 . Roast on low flame stirring intermittently for about 15 minutes .

3 . Now add melted ghee little by little . Dont add more ghee . Mix it well .

4 . Start to roast it on low flame , do not increase the flame and do not forget to keep stirring the mixture around every few seconds . Like this rost the flour about 30 – 35 minutes .
5 . The mixture is well roasted when it starts giving off a fragrance of roasted flour and turns into lightly reddish , but ensure it doesn’t turn brown .

6 . Once done switch off the flame and remove from stove .
7 . Add cardamom powder and mix it well .


8 . Now add sugar powder and mix it well .



9 . Transfer the roasted flour in to wide bottom dish ( so you can mix it well easily ) . Set the flour mixture aside for 5 – 10 minutes so it cools down a bit . When it still warm you can prepare making laddus because it binds better .
10 . Mix well the flour mixture by hands so that it is all one homogeneous mixture .



11 . To make a laddu take a small portion of the flour mixture in the palm of your hand and press tightly together .



12 . Now slowly trying to shape it in to a small ball .



13 . Repeat with the rest of the mixture and place the laddus on a tray to cool .

14 . When cool completely store in airtight container .

15 . From this recipe yields 35 laddus .
