Amritsari chole masala powder

They have strong aroma and intense flavour . This recipe shows you how to make the perfect dry amritsari chole masala powder at home . You can make a small or medium batch , depending on how frequently you use it.

Ingredients : Masala whole spices .

1 . Cumin seeds – 2 tbsp .

2 . Coriander seeds – 2 tbsp .

3 . Black pepper corns – 1 tbsp .

4 . Cloves – 5 .

5 . Bay leaves – 3 .

6 . Cinnamon stick – 2 inches .

7 . Star anise – 1 .

8 . Black cardamom – 3 .

9 . Green cardamom – 5 – 6 .

10 . Mace – 1 .

11 . Spicy red chillies – 4 – 5 .

12 . Pomegranate seeds – 3 tbsp .

13 . Kasuri methi – 1 tbsp .

14 . Fenugreek seeds – 1 / 4 tsp .

15 . Salt – 1 / 4 tsp .

Powder spices :

1 . Dry mango powder – 1 tbsp .

2 . Black salt powder – 2 tbsp .

3 . Kashmiri red chilli powder – 1 tbsp .

Method :

1 . Take a broad kadai heat and dry roast all ingredients number 1 – 12 . Dry roast them on a medium flame for 6 – 7 minutes or till they turn aromatic .

2 . Now add ingredients number 13 kasuri methi , Fenugreek seeds and salt dry roast them on a medium heat for 1 – 2 minutes. Transfer to a plate and keep aside to cool .

3 . Add all powder masalas , mix well and powder in a mixer grinder till smooth and fine powder .

4 . Store in air tight container and use as required .
