
Eggless Banana Bread recipe is easy to make with simple ingredients and it is delicious bread with the perfect texture, moist and dense. Totally Irresistible . The nuts add an extra layer of texture and flavours which make it even more delicious. This is perfect for breakfast with cup of coffee or tea or when desert cravings hit . Use always over ripe Bananas that nobody wants to eat. Don’t throw them yet. Make this quick and easy banana bread recipe with them and see it being devoured . I prefer making my banana bread with oil instead of butter as it makes it lighter and moist . In addition I also add chocolate chips as my grand kids love their banana bread with chocolate chips . I prefer brown sugar as it contains molasses which gives a nice Carmel flavour and makes a dense and moister bread you can also use granulated white sugar . I have used pecan instead of walnuts or you can use any nuts of your choice to add the texture or skip it to keep it nut free .

Ingredients :
1 . All purpose flour ( maida ) – 1 3/4 cups .
2 . Over ripe Bananas – 2 big .
3 . Brown sugar – 3/4 cup .
4 . Any odour less oil – 1/2 cup .
5 . Curd – 3/4 cup .
6 . Baking soda – 1 tsp .
7 . Baking powder – 1/2 tsp .
8 . Salt – 1/2 tsp.
9 . Cinnamon powder – 1/2 tsp .
10 . Vanilla essence – 1 tsp .
11 . Pecans roughly chopped – 1/2 cup.
12 . Chocolate chips – 1/4 cup.
Method :
1. Preheat the oven to 350 F ( 180 C ) and line a 9 inch bread loaf pan with parchment paper. Spray with cooking oil and keep aside .

2. Sift the dry ingredients in a mixing bowl . Flour , baking soda , baking powder , salt and cinnamon powder . Mix and keep aside .
3 . In another mixing bowl , peel and add the ripe bananas, mash well using fork .
4 . Add the sugar , oil ,curd and vanilla essence to the mashed banana . Here if you want to use hand mixer . Mix till combined and smooth .

5 . Add the dry ingredients little by little using the spatula ( reserve a little ) in to wet mixture .

6 . Fold it until almost combined .

7 . Stir the pecan and choco chips in the remaining dry ingredients and mix well.
8 . Add to the batter mix until just combined . Don’t over mix the batter .

9 . Pour the batter in to pre – lined bread loaf pan . Spread using a spatula to even out the top . Tap to remove any air bubbles .
10 . Spread some choco chips and pecans on top .

11. Bake at 350 F ( 180 C ) for 60 – 65 minutes or until the tooth pick inserted in the centre of the bread comes out clean .

12 . Allow resting in the pan for 10 minutes after which transfer to cooling rack . Let it rest for 1 – 2 hours or until completely cool . Slice and serve . Enjoy with hot coffee or tea .
