
A super moist , light fluffy eggless cake with goodness of carrots and dates . This is one of best loaf cakes to have as evening snack or even for breakfast with tea. It is light, super moist and you could make it more healthy even by adding whole wheat flour. Adding caramel syrup in it makes it even better .
Ingredients :
1 . All purpose flour ( Maida) – 1 1/4 cup .
2 . Baking soda – 1/2 tsp .
3 . Baking powder – 1 tsp .
4 . Salt – 1/4 tsp .
5 . Vanilla essence – 1 tsp .
6 . Brown sugar – 3/4 cup.
7 . Oil ( odour less ) – 1/2 cup .
8 . Yogurt ( curd ) whisked , at room temperature – 1/2 cup .
9 . Warm milk – 1/4 cup .
10 . Caramel syrup – 2 tbsp .
11 . Grated carrots – 1 cup .
12 . Chopped dates – 1 cup .
13 . Chopped walnuts or any nuts of your choice – 1/2 cup .
14 . Flour – 1 tbsp .

Method :
1 . Preheat the oven at 180c or 350 f .
2 . Grease the loaf pan and lined with parchment paper .
3 . Sift together flour , baking soda , baking powder and salt .
4 . In a bowl mix together grated carrots, chopped dates and walnut with one tablespoon of flour.
5 . In another big mixing bowl beat oil , brown sugar until combine, now add curd and beat again to well combine .
6 . Add vanilla essence , caramel syrup and milk mix well .
7 . Add sifted flour little by little and gently mix it with spatula until well combined , do not over mix it .
8 . Pour the batter into the greased and lined loaf pan and tap to remove any air bubbles.

9 . Bake in preheated oven at 180 degree centigrade for 50 – 60 minutes or until toothpick inserted come out clean .
10 . Cool the cake and cut into slices .

How to prepare caramel syrup:
Sugar – 2 full tbsp .
Hot water – 1 tbsp.
In a small pan heat the sugar in medium flame , do not stir . When sugar start to melt and caramellized switch off the flame and immediately add hot water and mix well . Place the pan back to the stove top over low flame. Bring to gentle simmer and stir offen until the hardned caramel is dissolved . Switch off the flame and keep aside to cool .
