Cowboy Caviar Salad

Cowboy Caviar sometimes called Texas Caviar or Mexican Caviar is like a cross between a bean salad and fresh salsa. It combines any two types of Beans like Chana , Rajma , Black Beans , Black eye peas. Use only bigger size beans don’t use small ones like green grams and masoor,with colorful medley of fresh vegetables and tangy balsamic- lime vinaigrette. This super fresh and colorful cowboy caviar combined with beans, delicious summer vegetables and a sweet and tangy lime dressing to make a bold and versatile dish that you will find yourself making over and over, from party dip to a salad topper . This can serve as a side dish with dinner as a chunky dip for chips as a topping for tacos, stuffed in to a burrito or as a burrito bowl and so much more .

Ingredients :

For dressing :

1 . Olive oil (extra virgin) – 2tbsp .

2 . Fresh lime – 1 ( zest & juice- around 2 tbsp ) .

3 . Balsamic vinegar – 1/2 tbsp .

4 . Chili powder seasoning – 1/2 tsp .

5 . Cumin powder- 1 tsp . ( roasted and ground ) .

6 . Salt- 1/2 tsp .

7 . Honey – 1 tbsp .

Method – Mix all in a mason jar and shake well .

For salad:

1 . Boiled Navy beans ( I used canned ) – 1 cup .

2 . Boiled kidney beans ( I used canned ) – 1 cup .

3 . Sweet corn- 1 cup .

4 . Small bell pepper – 1 .

5 . Cucumber – 1 ( medium size peeled and deseeded ) .

6 . RomaTomatoes – 2 ( medium size and deseeded ) .

7 . Onion – 1/2 cup chopped .

8 . Jalapeño pepper – 2 – 3 ( deseeded and chopped ) .

9 . Avocado – 1 .

10 . Coriander leaves – 2 tbsp .

Method :

1. In a small bowl whisk together the olive oil, lime zest and lime juice, balsamic vinegar, chili powder, cumin powder, salt and honey .

2 . Rinse and drain both cans of beans and sweet corn in a colander . Once well drained transfer them to a large bowl .

3 . Finely diced the bell pepper , tomatoes, jalapeños, onion and peeled and deseeded cucumber. Try to dice the vegetables in to pieces that one roughly the same sized as the beans for a less spicy salad scrape the seeds out of the jalapeño before dicing . Roughly chop the cilantro.

4 . Add the chopped vegetables to the bowl with beans .

5 . Pour the dressing over the salad then stir until everything is well coated . Serve immediately or refrigerate until ready to eat .
