
Dum ke roat is semolina cookies existed in India from ages . Roat / roote / roate what ever you call it . The big size cookies measuring the size of your palm made with almond flour, semolina, all purpose flour and clarified butter . Hyderbadi dum ke roat is specialty of Muharam- the first month of Islamic calendar. Dum ke roat has become an iconic bake of Hyderbad and is available as seasonal bake at all the famous bakeries. Traditionally these cookies are made in clay oven but electric oven are a good alternative .
Ingredients:
1. All purpose flour ( maida) -2 cups.
2 . Semolina ( rawa) – 1 1/2 cups fine variety.
3 . Sugar powder – 2 cups.
4 . Desiccated coconut – 1 /2 cup .
5 . Pistachios – 3 tbsp full .
6 . Almonds- 3 tbsp full.
7 . Cardamom powder – 1 tsp .
8. Raisins – 1 – 2 tbsp .
9 . Baking powder – 1 tsp .
10 . Baking soda – 1 / 2 tsp .
11 . Salt a pinch .
12 . Warm milk – 180 ml if needed to be add more .
13 . Saffron a little .
14 . Clarified butter (ghee ) – 1 /2 cup (warm) .
For garnish : Almond and pistachios slices .

Method:
1 . Soak saffron in 1 tbsp of warm milk and keep aside.
2 . Powder pistachios , almonds and desiccated coconut .
3 . Sieve the flour with baking powder, baking soda and salt.
4 . In a big mixing bowl add sieved flour, ground powder of nuts and coconut, semolina, sugar powder and cardamom powder. Mix it well .
5 . Add raisins and saffron milk . Now add clarified butter and mix it well .
6 . Using the warm milk mix the ingredients together. While using the milk make sure to add it in smaller amounts . Since there are chance that the milk needed to less or more depending upon the quality of flour and semolina .

7 . Once done let the dough rest in warm place for about an hour covered with damp cloth .
8 . Preheat the oven at 180 C or 350 F for 10 minutes .
9 . After one hour mix the dough again and taking small portion mold in to round medium sized balls then slightly press and flatten it and decorate each cookies with sliced almonds and pistachios.



10 . Arrange in baking tray lined with parchment paper . Leave enough space in between the cookies to facilitate the spreading .

11 . Bake the cookies in preheated oven at 180C for 20 – 25 minutes or till they are done .
12 . Take the cookies out from oven and leave the cookies as it is till it’s temperature comes down .
13 . Once the cookies are cooled remove them from the tray and consume, have them with tea or coffee and store in an airtight container.
