Malpuri

Malpuri is a traditional Mangalorean dish . Malpuri is soft at centre and crispy towards the edges and outer surface. Malpuri is one of my favourite sweet. It is very easy to make , just mix all ingredients rest the batter for minimum one hour or more ,then shallow fry it in ghee or oil.

Ingredients:

1. Maida ( all purpose flour) – 11/2 cups.

2. Fine rawa ( semolina ) – 1/4 cup.

3. Sugar – 11/2 cups.

4. Butter milk or (mix together half cup curd and half cup of water ) – 1 cup .

5 . A pinch of salt.

6. A pinch of soda bicarbonate ( optional) .

7. Cardamom powder – 1 tsp .

8 Yellow food colour or turmeric powder a little.

9. Ghee (clarified butter) or oil for shallow frying .

Method:

1. In a large mixing bowl add together maida , rawa, sugar and a pinch of salt.

2. Add buttermilk and mix well prepare thick batter make sure there are no lumps. Keep aside to rest the batter for about 8 to ten hours.

3. Next day add food colour, cardamom powder and a pinch of soda bicarbonate to the batter and mix it well , add more water and make it dosa batter consistency.

4. Heat oil or ghee in a wide , shallow and flat frying pan.

5. Pour a ladle full of batter,do not spread. Cook in a medium flame.

6. Wait until edges are brown, then flip it and cook on the other side.

7. Take out the Malpuri from the ghee . Press it slightly with another spatula to remove excess ghee from the Malpuri. Let it drain on paper towel . Consume with in 2 – 3 days .
