Tomato Phanna Upkari

Phanna Upkari is a traditional Konkani preparation. This is a spicy dish. Mostly this dish is made with fish like sardines or mackerel. For vegetarian this dish is made using tomatoes. This dish goes well with rice or dosa like pan polo ( neer dosa ) .

Ingredients:

1. Big size tomatoes – 6 – 7 .

2. Onions – 4 – 5 .

3. Chilli powder – 1 – 2 tbsp.

4. Coriander powder – 1/2 tsp ( optional ) .

5. Tamarind – 1 small pebble sized.

6. Coconut oil – 1 – 2 tbsp.

7 . Mustard seeds – 1/2 tsp .

8 . Salt to taste.

Method:

1. Clean and cut the tomatoes into big pieces.

2. Blanch in hot water or microwave for 4 minutes without adding water .

3. Remove the skin of the tomatoes and mash them and keep aside.

4. Soak tamarind in little bit of water then extract the pulp and keep aside.

5. Cut onions into small pieces.

6. Heat oil in a pan add mustard seeds, when it starts to splutter add onion pieces and fry till golden brown on medium heat. Add coriander powder and fry a little.

7. In a small bowl mix together 1 tablespoon of water and chilli powder, this is so that chilli powder doesn’t burn.

8. Now add chilli paste to the onions and fry on low heat until the raw smell goes.

9. Now add tamarind pulp and salt fry few more minutes, then add tomato puree and water as much as needed. Simmer the flame and cook for about ten minutes, stir it in between.

10 . When the curry becomes thick switch off the flame.

11. Serve it with rice or dosa .
