
This is one of the dish that you don’t see in restaurants . It’s uses the leaves of the cauliflower that are normally discarded. It’s is considered quite a delicacy. The cauliflower leaves are not only edible they are delicious also, leaves and stems are healthy and nutritious chocked full of fiber,calcium and vitamin C . I learned this recipe from my younger sister Ranjitha . This is her mother-in- law’s recipe .
Ingredients:
- Cauliflower leaves- 10 -12.
- Besan-3-4 tbsp.
- Rice flour- 1-2 tbsp.
- Coriander seeds-1-2 tsp.
- Chill flakes or chilly powder- 1/2 tbsp.
- Green chilies-2-3 .
- Ginger piece-1/2 inch.
- Turmeric powder- 1/2 tsp.
- Asfoetida-1tsp.
- Salt for taste.
- Oil for deep frying.
Method:
- Take leaves from cauliflower soak in salt and turmeric water for some minute.

2. Remove all stalks from the leaves and chop them finely.


3. In a mortar add coriander seeds,ginger,green chilies,chili flakes and salt. Crush it into coarslely.

4. In a mixing bowl add chopped leaves and crushed masala, keep it a side for few minutes.
5. Now add besan, rice powder and asafoetida and mix it well, no need to add water, if it too dry sprinkle some water and this stage check the salt and chill powder if need add .
6. Heat oil in a deep frying pan, when it hot enough for frying, make small fritters from the batter and fry in hot oil till it becomes golden brown and crispy .



7. Serve it with tea .
