Gobi Manchurian

Gobi Manchurian is a popular Indo-Chinese appetiser made with cauliflower. This delicious crisp fried appetiser is very popular in Indian subcontinental. It makes its appearance every where in street stalls, restaurants and even in parties.

Ingredients:

  1. Cauliflower – 1 medium sized , cut into bite sized florets .
  2. Onion – 1 small .
  3. Capsicum – 1 small .
  4. Garlic – 2tbsp finely chopped.
  5. Green chillies- 2-3 finely chopped.
  6. Spring onions – 1 bunch.
  7. Coriander leaves – 2 tbsp chopped.
  8. salt to taste

Sauces :

Tomato sauce – 2-3 tbsp .

Soya sauce – 2 tbsp .

Chilli sauce – 1/2 tsp .

Manchurian sauce – 1 tsp ( optional ) .

Batter for coating :

Maida ( all purpose flour ) – 4 tbsp .

Corn flour- 4 tbsp .

Pepper powder – 1tsp .

Chilli powder – 1/4 tsp .

Garlic powder – 1/4 tsp .

Salt to taste .

Cooking oil for frying.

Method :

  1. Clean cauliflower’s florets and soak them in to water with little salt and turmeric powder. Rest them for 5 minutes. Discard the water and drain them to a colander, allow the water drain completely.

2 . Chop onions , spring onions, capsicum into thin slices. Cut ginger , garlic ,green chillies into fine pieces. Chop coriander leaves .

3. Now add salt, chilli powder, pepper powder and garlic powder to cauliflower’s florets mix it well and keep it aside for some time . Now add maida and corn flour to the florets, if needs add little water and make a thick coat. Check the salt if needs add more .

4 . Heat oil in kadai . Check the oil is hot enough to fry , add florets one by one and gently slide in hot oil . Make sure flame is medium and keep frying stirring often. At one point you will see that the bubble begin to reduce. During this time keep stirring without stopping.when they are golden brown remove from oil and drain them on kitchen tissue. Like this fry all florets and keep it aside.

5 . Now make manchurian sauce . Mix all sauces in a small bowl , check the salt and add if needs .

6 . Take 2 – 3 tbsp water in a bowl add 1 tsp maida and 1 tsp of corn flour mix it well and make a thin slurry and keep aside.

7 . Heat 2 – 3 tbsp of oil in a wok or use a wide pan . Add garlic , green chillies and sauté for few seconds then add onions and capsicum sauté for 5 – 10 seconds now add spring onions ( keep a little for garnish ) fry for few more minutes do not over cook them as we want them crunchy , but also ensure the raw smell as gone . Sauté them high flame only .

8 . Now add sauces and mix well ,then add maida slurry and cook it for 1 – 2 minutes until the sauce turn thick .

9 . Add fried cauliflowers and mix it well with sauces. Switch off the flame and garnish with spring onion greens and coriander leaves.

10 . Serve hot as an appetizer or side dish with fried rice or noodles .
