Eggless Chocolate Banana Bread (Vegan)

This dense chocolate flavored banana bread is definitely a treat and the most surprising thing about the recipe is that this decadent delight is eggless and vegan to top it. This recipe came from Savitakka (Atul’s cousin) whose daughter had come over for Thanksgiving last year and made this wonderful treat for us. Thank you Savita Nayak and Ashwini Nayak for sharing this wonderful recipe with me and then allowing me to post it in this blog. This is a recipe to cherish and a keeper for sure.

Ingredients:

  • Wheat Flour – 1 and 1/2 C
  • Banana – 2 Overripe
  • Cocoa Powder – 1/4 C
  • Sugar – 3/4 C
  • Oil – 1/3 C
  • Water – 1/3 C
  • Baking Soda – 1 tsp
  • Salt – 1/4 tsp
  • Walnuts (optional) – 1/2 C

Method:

  1. In a mixing bowl mash the overripe bananas with a fork, add the sugar and mix with a balloon whisk.
  2. Add baking soda, oil, salt, water and cocoa powder and whisk well making sure there are no lumps.
  3. Add the wheat flour and whisk well again to make sure that there are no lumps, but do not over mix
  4. Preheat oven to 350 F and bake this mixture in a loaf pan for about 40 minutes or till a toothpick inserted in the middle comes out clean.
