Ingredients for Buns :

  • Butter milk or Curds – 1 cup.
  • Maida-  3 cup.
  • Sugar – 15 tsp.
  • Butter – 1 tbsp.
  • Salt – less than 1/4 tsp.
  • Cooking soda ( baking soda ) – 1/2 tsp.
  • Oil – enough for deep frying.

Method :

  • Sieve Maida.
  • In a mixing bowl add butter milk,sugar,salt,butter and baking soda. Mix it well.
  • Add maida little by little and kneed to a smooth dough.
  • Keep covered for 8 to 10 hour.
  • Make even sized ball dredge in maida and roll out,  thicker than normal puris.
  • Deep fry in hot oil till golden brown on both side.
  • Serve with Mooga dali usali.

Variation :- add 1 Tbs of fresh grated coconut to the dough. Another variation is mash 1 small ripe banana (preferably devbale or baby banana) in this case leave out the sugar and slightly increase the maida to get the consistency.

Ingredients :

  • Moong Dhal – 1 cup.
  • Green chillies – 2.
  • Red chillies – 1.
  • Ginger – small piece.
  • Grated coconut – 1 tbsp.
  • Oil –  1 tsp.
  • Mustard seeds – 1/2 tsp.
  • Curry leaves – 1 – 2 sprigs.
  • Asafoetida – 1/4 tsp.
  • Salt to taste.

Method :

  • Clean and wash moong dhal.
  • Heat oil in kadai add mustard seeds when it starts to splutter add green chillies,red chilli,ginger,curry leaves and asafoetida stir for a second,now add 2 cups of water and bring to boil.
  • When it starts to boil add dhal and cook on low heat.
  • When dhal is almost done add salt, grated coconut and mix well.
  • Serve hot with buns.
  • You can also have it as an evening snack.
