Vellappam With Mixed Vegetable Kurma

Vellappam is traditional Kerala breakfast item.

Vellappam With Malbari koorma

Ingredients for Vellappam ;

  • Rice – 250 gms.
  • Cooked rice – 2 cups.
  • Grated coconut – 2 cups.
  • Yeast – 1 tsp.
  • Sugar – 1 tsp.
  • Salt to taste.
  • Oil enough for frying

Method :

  • Mix yeast and sugar in 1/4 cup of luke warm water and allow to the mixer to rise.
  • Extract milk from grated coconut.
  • Wash the rice and soak it in coconut milk for 3 hours.
  • Grind the soaked rice in a mixer grinder with just enough coconut milk so that the ground material will be thick,now add cooked rice and grind to a smooth paste.Add salt and yeast.
  • Allow to ferment to 10 to 12 hours.
  • Next day morning heat a deep curved ” Appam pan “and wipe it with a cloth dip in oil.
  • Pour a laddle full of batter in the in the center of the hot pan.Lift pan from fire and tilt it in circular motion so that Appam is formed.
  • Center of the Appam should be thicker than sides.
  • Close with a lid and cook in a slow flame.
  • Cook on one side only.
  • When there is no uncooked batter,remove Appam carefully with flat laddle.
  • Serve hot with Kurma or vegetable stew.

 Note :Every Appam should be poured only when the pan becomes hot.Reduce flame after pouring.

Mixed Veg Kurma  : 

Malbari veg koorma

Ingredients :

  • Potato – 1 medium size.
  • Onions – 1 + 1  medium size.
  • Carrots – 2.
  • Beans – 8 – 10.
  • Cauliflower – a small piece.
  • Green peas – 1/2 cup.
  • Grated coconut – 2 cups.
  • Coriander leaves – 1 tbsp.
  • Garam masala – 1/4 tsp.
  • Turmeric Powder – 1/4 tsp.
  • Oil – 1 1/2 tbsp.

Grind together :

  •  Grated coconut – 2 tbsps.
  • Green chillies – 2.
  • Red chillies – 2.
  • Ani seeds (Saunf ) – 1/2 tsp.
  • Poppy seeds (Khus Khus ) – 1/2 tsp.
  • Coriander seeds – 1/2 tsp.
  • Cardamom – 1.
  • Cinnamon – 1/2 inch piece.
  • Cloves – 3.
  • Garlic flakes – 2.
  • Ginger -1/2 inch piece.
  • Coriander leaves – few.

Method :

  • Dice mixed vegetable into small pieces with one onion.
  • Keep separate 2 tbsps of grated coconut and extract milk from remaining coconut.
  • Extract first and second milk of coconut.
  • Cook diced vegetable in second extract of coconut.
  • Heat little oil in a pan and fry all ingredients for grinding.
  • Grind it to a smooth paste.
  • Heat oil in a pan and add finely cut onions and fry till translucent,add ground paste with garam masala and turmeric powder and fry till oil separate.
  • Now add boiled vegetable and salt.Cook for few minutes.
  • Pour first extract of coconut and mix well and switch of the heat.
  • Garnish with coriander leaves.
  • Serve hot with Appam.

    1. Smitha Pradan for ferment yeast is must instead of yeast some are using Sweet toddy.
