Sanjeera is a konkani sweet dish mostly prepared as prasadam during shravan masa chudi pooja. It is basically a stuffed puri with sheera as stuffing .

Ingredients for filling :
- Fine Rawa – 1 cup.
- Sugar – 1 1/2 cup.
- Water – 2 cup.
- Ghee – 1 tbsp.
- Kesar yellow colour – a little.
Ingredients for the dough :
- Maida – 1 cup.
- Wheat flour – 1/4 cup.
- Kesar colour – a little.
- Ghee – 2 tsp.
- Salt a pinch.
- Water – enough to mix the dough.
- Ghee or oil for deep frying.
- little flour for dusting.
Method for Filling :
- Heat ghee in a pan, fry rawa for one to two minutes.
- Remove from the pan and keep separately.
- Heat water in the same pan, when it start to boil add fried rawa. Keep stirring constantly till it forms a thick mass.
- Now add sugar and stir constantly till again it becomes a thick mass.
- When it doesn’t stick on to wet hands and gets a shine, remove from the fire, keep it aside.
Method :
- Mix salt, colour and ghee to the flour till it blends well.
- Add water gradually and knead to a soft pliable dough.
- Keep under wet cloth.
- Make even sized balls out of the inner filling.
- Divide outer dough into equal number balls.
- Roll the maida dough into small pooris.
- Place the stuffing in the pooris and join the edges.
- Use all stuffing and dough this way.
- Roll the stuffed dough balls to thick pooris.
- Heat ghee or oil and deep fry the pooris on a slow flame .
- Fry till crisp.
