Clear Chicken Vegetable Soup1

It is the flu season which means that it is inevitable that someone or the other  in the family is down with either the flu or flu like symptoms. The best way to fight a cold or the flu is to consume a lot of fluids. That is where this soup comes in. Its a recipe I came up with that is full of healthy ingredients such as ginger, garlic and turmeric. The fiery punch of pepper is amazing when it comes to getting rid of that blocked nose and itchy throat. That combined with chicken and vegetables makes for a hearty meal.

Ingredients:

Boneless Chicken – 200 gm Cut into Strips
Onion – 1 cup finely chopped
Garlic – 6 cloves minced
Ginger – 2 Tbsp Grated
Carrots – 1/2 cup chopped into tiny cubes
Beans – 1/4 cup finely chopped
Mushrooms – 6 sliced
Green Chilly – 1 finely chopped
Bay Leaf – 1
Turmeric – 1/2 tsp
Italian Seasoning – 1 tsp
Butter – 1 Tbsp
Chicken Stock – 1 cup
Water – 1 1/2 cup
Dried Thyme – 1 tsp
Fresh Thyme – 2 sprigs
White Wine – 4 Tbsp
Pepper Powder – 2 tsp
Salt – To Taste
Soy Sauce – 1 tsp (optional)

Method:

In a saucepan, take bay leaf, fresh thyme and dried thyme. Add water and bring to boil. To this add the chicken strips. Cook  for 5 mins. Remove the chicken. Filter and reserve the water after discarding any scum that might have formed on the surface. In the saucepan, melt butter and add onions, green chilly, ginger and garlic. Saute and cook till soft. Add the carrots and beans. Saute. Add the white wine and reduce. Then add the mushrooms, cook till they let out water. Add salt, pepper, italian seasoning and turmeric. Mix well. Add the reserved water and chicken stock. Bring to boil and add the chicken. Cook for 5 mins. Add the soy sauce. Mix well. Serve hot.

Note:

  1. You can substitute the chicken with tofu.
  2. You can also add other vegetables such as cabbage and broccoli.
