Pulissery

Pulissery is an authentic Kerala recipe made with butter milk and vegetables such as Ash gourd ( winter melon ) This is one of dish in Sadya .

Ingredients :

Ash gourd ( winter melon ) – 250 gms .

Grated coconut – 1 cup .

Green chillies – 4 – 5 .

Cumin seeds – 1/4 tsp .

Turmeric powder – 1/4 tsp .

Fenugreek seeds – 1/4 tsp .

For temper :

Oil – 2 tsps .

Mustard seeds – 1 tsp .

Cumin seeds – 1/2 tsp .

Curry leaves – few .

Red chillies – 1 – 2 .

Method :

1. Wash peel , remove the seeds of Ash gourd and cut into small cubes .

2. Cook Ash gourd in a vessel with turmeric powder and enough water ( 3/4 cup ) . Since Ash gourd cooks fast , make sure the pieces are not over cooked , cook it over a low flame .

3. Grind together grated coconut , green chillies and cumin seeds in to a fine paste .

4. In a small pan dry roast Fenugreek seeds then powder it .

5. When Ash gourd cooked well add salt and mix it well . Now add ground paste and cook till raw smell of masala goes off .

6. Now add beaten curd to the curry leave it to simmer in a low flame turn off the flame when the curry is just begin to boil . Make sure the curd doesn’t boil otherwise it will curdle .

7. Heat oil in a pan add mustard seeds and cumin seeds . Just when they start splitting add curry leaves and red chillies switch off the flame . Pour this over curry and sprinkle roasted Fenugreek powder .

Serve hot with rice .
