Kali Thori ( Black Pigeon Peas ) and mix vegetable sukke .

Sukke is authentic Konkani style coconut curry . The spices ground with coconut are roasted urad dal and red chillies . This lends a lovely aroma and flavor to the coconut masala .

Ingredients :

1 . Kali Thori ( Black Pigeon Peas ) – 1 cup .

2 . Bread fruit ( Jeevi kadgi ) – 1 cup .

3 . Madras cucumber ( Magge ) – 1 cup .

4 . Malbar yam – ( Surnu ) – 1 cup .

For Sukke Masala :

1 . Grated coconut – 2 cups heaped .

2 . Red chillies – 10 – 12 .

3 . Urad dal – 4 tsp .

4 . Tamarind – 1 small marble sized .

5 . Oil – 1 tsp .

Salt to taste .

For tempering :

1 . Coconut oil – 2 tsp .

2 . Mustard seeds – 1 tsp .

3 . Curry leaves – 1 sprig .

Method :

1 . Soak thori in plenty of water over night .

2 . Next day cook this with enough water in pressure cooker until soft ( after 4 – 5 whistles , reduce the heat to medium low and cook for 15 – 20 minutes ) .

3 . Drain the cooked Thori ( use the drained Thori broth to make saru ) .

4 . Deskin  and cut Surnu ( malbar yam ) in to 1/2 inch cubes .

5 . Deskin and remove the seeds from the Madras cucumber and cut in to 1/2 inch cubes .

6 . Similarly cut the bread fruit also .

7 . In a pressure cooker pan cook these veggies with enough water for 1- 2 whistles and put off the flame .

To make Sukke Masala :

8 . In a small pan heat 1 tsp of oil roast the urad dal till it turns red . Remove it from the pan . In the same pan roast the red chillies . Let it cool along with urad dal .

9 . Grind the coconut , red chillies , tamarind  and urad dal in a mixer blender to a coarse paste with little water .

10 . Now add cooked Kali Thori , salt and ground masala to the cooked vegetables .

11 . Reduce heat and simmer for about 7 – 10 minutes . Stirring often until the gravy becomes thick and almost dry .

12 . In a small pan heat oil and add mustard seeds , when it starts to splutter add cury leaves and switch off the flame .

13 . Add this seasonings to the sukke and mix it well .

14 . Remove from flame and serve hot with dal and rice .

Notes : Use any combination of vegetables you have like , Bread fruit, potato ,bajje dento ( amaranths stem ) or drumsticks , potato with cabbage , potato with Ivy gourds ,alsando ( yard beans ) to make this curry .
