
My kitchen never goes short of savouries . Corn chiwda , Tukdis , Alsando , Chaklis are always the favourite among my family members . Alsando is a traditional Konkani savoury . It is called so as it resembles ‘ ‘ Alsando ‘ or long yard beans .
Ingredients :
Maida – 2 cups heaped .
Ghee – 1 ladle .
Ajwain – 1 tsp .
Sugar – 2 tsp .
Salt – 1 tsp .
Oil for deep frying .
Method :
1 In mixing bowl add maida , sugar , salt and ajwain .
2. Heat ghee and add this hot ghee to maida mixture and mix it well .
3. Now add little by little water and make a dough . It should be a firm dough like that of Puri .
4. Close with damp cloth and keep aside for half an hour .
5. Make equal size balls .
6. Take one ball and roll it like chapathi.
7. Cut it into one and half inches size long strips.

9. Heat oil in kadai fry the alsando strips till it become crispy .
10 . Prepare all other balls similarly and fry in oil.
11. Your Alsando is ready to eat . You can store these in air tight container for about 15 – 20 days just like Tukdi .
