Mango Tea Cake Eggless

Summers are finally wrapping up . The arrival of monsoon excites me . The cool showers makes it a perfect time for hot cup of tea . It cannot be a tea – time without a tea cake . The mango season is almost over and to bid farewell to this wonderful fruit , I decided to make mango Tea Cake .

Ingredients :

1 . Mango pulp – 1 cup .

2 . Sugar – 3/4 cup .

3. Oil  – 1/2 cup .

4 . Vinegar – 1 tsp .

5 . Yellow food colour – 1/2 tsp .

6 . Mango essence – 1/4 tsp .

7 . Maida ( all purpose flour ) – 2 cups .

8 . Baking powder – 1 tsp .

9 . Baking soda – 1/4 tsp .

10 . Salt – 1/4 tsp .

11 . Milk – 1/2 cup .

Method :

1 . Blend together mango pulp and sugar smoothly in blender .

2 . Transfer this to a big mixing bowl .

3 . Add oil , vinegar , food colour and essence . Mix it using whisker and combine well .

4 . Sieve together maida , baking powder , baking soda and salt .

5 . Meanwhile preheat the oven at 180 centigrade for 10 minutes .

6 . Now add maida mix to the mango mixture little by little using cut and fold method .

7 . In between add milk little by little until the dough is combined well . Dont over mix .

8 . Grease and line a butter paper to the cake tin .

9 . Transfer the cake mixture to the greased tin .

10 . Tap the cake tin twice to level up the mixture and remove any air bubbles if present .

11 . Bake in preheated oven at 180 digree centigrade for 40 – 45 minutes .

12 . After 40 – 45 minutes take out the cake from oven . Insert the tooth pick to check if the cake is done . If the tooth pick  comes out clean it is done else you can bake further for 2 – 3 minutes .

13 . Cool and un mould the cake .

14 . Your Mango Tea Cake is ready to serve .
