Khaman Dhokla

Khaman Dhokla is a soft fluffy steamed snack of Gujarati cuisine . This is all time favourite , khaman dhokla as a starter , as a tea time snack or even for breakfast . It is a famous snack sold in every street of Gujarat .

Ingredients :

1 . Besan ( chick peas flour) – 1 1/2 cup .

2 . Rawa ( semolina ) – 3 tbsp .

3 . Ginger – 1/2 tsp (finely chopped ) .

4 . Green chillies – 1 – 2 ( finely chopped ) .

5 . Turmeric powder – 1/4 tsp .

6 . Sugar – 1 tsp .

7 . Salt – 1/2 tsp .

8 . Lemon juice – 1 tbsp .

9 . Oil – 1 tbsp .

10 . A pinch asafoetida .

11 . Water – 1 cup approx .

12 . Eno fruit salt – 1 tsp .

For tempering :

1 . Oil – 3 tsp .

2 . Mustard seeds – 1 tsp .

3 . Cumin seeds – 1/2 tsp .

4 . White sesame seeds – 1 tsp .

5 . A pinch asafoetida .

6 . Green chillies – 2 ( slit ) .

7 . Few curry leaves .

8 . Water – 1/2 cup .

9 . Sugar – 1 tsp .

10 . Salt – 1/4 tsp .

11 . Lemon juice – 1 tsp .

For garnishing :

Grated coconut – 1 tbsp .

Chopped coriander leaves – 1 / 2 tbsp .

Method :

1 . In a deep mixing bowl combine together besan , rawa , sugar , ginger , green chillies , turmeric powder , oil and lemon juice .

2 . Add approx one cup water and mix well using whisk to get smooth batter .

3 . Heat the steamer with water .

4 . Just before steaming add eno fruit salt and mix lightly .

5 . Pour the mixture immediately to a greased 8 inches tin .

6 . Steam in a steamer for 15 minutes .

7 . Keep aside to cool and cut in to pieces .

8 . Heat oil in small pan and add the mustard seeds .

9 . When it starts to crackle add cumin seeds , sesame seeds , green chillies and curry leaves , saute on medium flame for few seconds .

10 . Add water , sugar , salt , lemon juice and bring it to boil .

11 . Pour the tempering over the prepared dhokla and spread evenly , wait for 5 – 10 minutes so that the water is absorbed completely .

12 . Garnish with coriander leaves and coconut .

13 . Serve the dhokla with green chutney if you want .
