Whole wheat Nan Khatai

Nan Khatai traditionally made with Maida ( all purpose flour ) for healthier version I made with whole wheat flour .

Ingredients :

1. Whole wheat flour – 2 cups .

2 . Fine rawa ( semolina ) – 2 tbsp .

3 . Sugar powder – 1 1/2 cup .

4 . Ghee + Dalda (hydrogenated vegetable cooking oil ) – 1 1/2 cup ( dalda 1 cup + ghee 1/2 cup ) .

5 . Cardamom powder – 1 tsp .

Salt a pinch .

Method :

1 . In a big mixing bowl add ghee and dalda together and mix it well . Take 3 tbsp of this mixture and keep it aside . If needed to the dough use later .

2 . Now add powder sugar and begin to cream the sugar , dalda and ghee mixture using whisker .

3 . The mixture should become smooth , light , fluffy and creamy .

4 . Now add cardamom powder and mix well .

5 . Add rawa and mix well .

6 . Now add little by little wheat flour and mix with spatula . Gently bring together the whole mixture to a dough , if needed add ghee, dalda mixture .

7 . Keep this dough over night with tightly closed .

8 . Next day pinch a medium large sized balls from the dough .

9 . Lightly roll them in your palms and slightly flatten them .

10 . Place them in a baking tray , keep some space between them as they expand while baking .

11 . Preheat the oven at 180 degree Celsius for 10 – 15 minutes .

12 . Bake the Nan Khatai in preheated oven at 180 degree Celsius for 20 -25 minutes or till light brown colour on down side of the Nan Khatai . Since oven temperature vary it may take less or more time . So do keep a check .

13 . Keep on the baking tray for 2 – 3 minutes . Then remove from tray and place them on wire rack to cool .

14 . When cooled store in airtight container .
